Starting 2023 with a new mindset!

Not a New Year's Resolution, but more a mindset changes for the New Year.
New Year's Resolution
If you are new here, name is Tori, and I am a special needs momma to 3; business owner X3, employed full time, and still find time to travel often with my family. If you are interested in finding out all the details, check out the 'About' section of my website. I started blogging to share all the things. This will include, but not limited to mom life, lifestyle, traveling, products I love and so much more! I am glad you are here and can't wait to share all the things with you. For today's blog, I want to touch on these New Year's Resolutions people are making.

Just hear me out, as I explain myself, and what I mean by that...
Don't make a New Year's Resolution, change your mind set for 2023.
Sometimes life will throw curve balls and turn it upside down. A New Year's Resolution is an accomplishment of a personal goal or otherwise improve their habits at the beginning of the year, but it is ALWAYS a temporary change. Prior to this year, every New Year's Resolution was to always get into better eating habits and healthy. Well, now it is not an option...so I need to change my mind set at this point. You may have some health concerns, that you should really be changing habits, but you start and then you fall off the band wagon. Change your mind set and think of what can happen if you don't make the necessary changes.
What has changed in our life to make this a permanent lifestyle change?
Last year in 2022, my son, Ethan, was diagnosed with Autism. Ever since he was born, we have always had the Gastrointestinal issues, which is typical for ones on the Autism Spectrum. Taking him to the doctors and specialists, my concerns were not being heard, and as a mother, we always know best, right? I had a few mom friends suggest a Pediatric GI Doctor that is out of Tampa, Fl. I took my son, and I was finally heard, where we scooped poop, for like a month straight. Got the reports back and it was found that my son's pancreas is not working. He has a very restrictive diet, he has to follow, along with having to take an artificial enzyme every time he eats. Having to restrict a 3-year-old autistic child, it has been so hard to get used to this new lifestyle, because he just does not understand nor can comprehend why he can't have the Mac N Cheese he could before. We have gone through the pantry, fridge and freezer, to make sure ALL food is removed that Ethan cannot eat. This makes it easier, to not make it so tempting to eat. It is not fair to him, that he cannot eat what the rest of the family has, so needless to say, our whole household is on the same diet as my son. My other 2 kids are not happy about it, but we are trying to make it fun and will make it work. Another thing we have done, is not go out to eat anymore, because it is hard to find places that will accommodate his needs. The ONE PLACE we will go out to eat, is at Disney World. They are the best at making sure he has something to eat and enjoys it. A chef will come out and tailor the meal to meet their specific dietary needs. What diet you ask? Well, we are basically Gluten Free, Dairy Free, Vegan and nothing acidic. Our family might as well eat air, because anytime we list them, we get looked at like we have 10 heads.
I will not lie, this change might break the bank, since the cost of food is so high right now, but it always costs double that to eat healthy. It might contribute to the fact that most of the population is considered "Obese"! I am learning a lot and finding new recipes, every day. If interested, I can share what recipes I have found that is a hit, for the whole family. For Christmas, I got a Disney Parks Cookbook, and I am also making the recipes, tailored to the dietary restrictions, so it is safe for my son to eat, and not miss out on the deliciousness of Disney favorite foods. I have made one so far, and it was just like the Adventureland Cheeseburger Spring Rolls. If you have a recipe that you think we would like to try, send it my way.
